I don’t usually go for ‘normal’ cakes like sponges, although they’re actually pretty tasty. But I made this one for my art class tomorrow. Unable to leave it at a basic sponge cake, I sort of turned it into a lemon cake, with lemon in the actual cake and lemon buttercream icing in the middle and on top. I used raspberry jam in the middle as well, and topped the cake with raspberries picked today from the allotment!

There is none! I just cream a load of butter, then sieve in icing sugar till it tastes nice, then add lemon juice, then more icing sugar until it’s the right consistency! Hope that helps anyway haha!
