Usually when the Rhubarb season comes around, we stick to stews and crumbles, but this year, with a very early start to the season, we’re expanding our Rhubarb empire. Here is the first in a long series of Rhubarb goodies, Rhubarb cake! Using the same recipe as apple cake, but with rhubarb instead. Deliciously moist and tangy, with a beautiful colour, and none of that gross feeling on your teeth you often get from stewed rhubarb.
