Having never made sorbet before, I felt that I was sure to fail. I took notes from 15 different recipes, all suggesting fairly different amounts of each ingredient, most of them using different fruits, and most of them using ice cream makers. This made me yet more worried. However, I compiled a rough recipe, based on combining many and changing it so it looked right. I was aiming for an easy recipe, that would work for any fruit, that wouldn’t require an ice cream maker.
I was at first hindered by my broken/awful freezer. Not only is it the size of a shoe box, it isn’t very cold at all. So my kind neighbour offered me use of her freezer, which she’d had delivered the day before – so it was definitely in good condition!
They worked a treat! I also discovered a few little things you can do on the way to make them even creamier, see recipe in the (now) published e-book here.
